Flag Day! (a day late)

I've mentioned before that I love BabyLegs and my favorite place to get them is Mom4Life.com. Well, I have another reason to love them!

Disney World-wrapping in up


On Wednesday, we cleaned out our hotel room, packed our car, and hopped on the bus for Epcot. (And by hopped on the bus, I mean lugged our four children, a cooler, a sling, a backpack, and a bag full of dry clothes in our stroller, took it all out of the stroller, folded the stroller, and hoped everyone made it on the bus). We actually started to see some blue sky! The kids enjoyed the bush sculptures, or fairytale topiary, or whatever you want to call them.

We spent a few hours riding Nemo, Turtle Talk, and "the Land" ride. Of course, Si was scared of Nemo, but he survived OK. As we walked around the countries, the skies began to darken. Is that thunder, or a big jet? A few minutes later we knew. A storm was blowing in. We jumped into the Moroccan restaurant and found a place to sit for lunch. Moroccan! We all tried some new things! We stayed there as long as we could, and then escaped just around the corner to the Moroccan stores. Here we spent most of our day, it seemed! The storms were just too much to brave this time. The kids made a mask, and we listened to fun music and sat on some couches until we were sure Josiah would break something expensive. But we were thankful for a dry place to rest.

Addie just crawled away from Jess, and he's wondering why I'm still taking the picture. I'll tell you why--he's hot.

Finally, we decided to walk on, and walk fast. Since Morocco was pretty close to half way, we sped past the 2nd half of the countries and rushed into the big "character meet" building. I put my foot down (for my poor babies, of course) and refused to go back into the rain. So Si, Addie and I hung out in a back hall, eating cookies and giving hugs to Chip and Dale, while Jess and the big kids headed back out to find another ride. It was a nice little break. We finished the day with a ride in the space ball? What is that thing called? The kids LOVED it. I think it was their favorite of the day.
When we got back to the hotel, we had to buy 17 snacks for the ride home. See, we were on the Disney Quick Service Dining Plan. I think it worked really well for our family. We only got meals for the adults and big kids, but all 6 of us ate our fill for three days. The only problem was that, because of the weather, we didn't snack as much--(who wants to stop in the rain to get ice cream?) so at the end, we had 17 snack credits. We loaded up on muffins, pb&j, juice, yogurt, etc and didn't have to stop for food on the way home. After a little locking-our-keys-in-the-car incident, we were finally on our way home at about 6pm. The kids were asleep pretty quick (OK, so was I) and Jess got us home quickly and safely.

Overall, it was a fun trip, and we had a great time together! Treats like these will not come around often for our family (especially when we have to start paying for four children!) Si was a little nervous, but he wasn't quite as scared as last time. Addie, who had been throwing tantrums when tired, did fine, thanks to my new ERGO baby carrier. I LOVE it. It looks like this, and can be worn on the front, back or hip. Adeline could even nurse and no one ever knew. Of course, she's become quite the acrobatic nurser, and we ARE weaning now, I promise. I came away thinking, "My children and my husband are awesome." And I think the kids have come away thinking, "Disney? Yeah, it's fun. It rains a lot so no one ever goes there."

Now, a word from our sponsors.

I am sitting down to write about Disney, i promise, but I just have to recommend a recipe really quick because I'm laughing at how fast my children scarfed it up. My children who will try to pick out every sliver of basil from the pizza sauce, or whine about generic, non-controversial food like sweet potatoes, chicken casserole, and pasta salad. They can't get enough of kale:
Seriously folks, I brought a bunch home from the coop today, prepared half so we could have something green with our pb&j, and it was gone before I could snap a picture. So I made the other half while they watched a movie. They're picking up the crumbs from the pan as we speak.
There are recipes all over the Internet, and I remember trying "flash fried spinach" with my brother and sister in law once. This is just as addicting, and a little healthier. So here's how I did it: Tear a bunch of kale into bite sized pieces--don't use the stems. Place in one layer on a large baking sheet.
drizzle with olive oil, salt, and, if you want, Parmesan cheese.
bake at 375 until crispy, i think it took about 15 minutes. Get a plate for yourself before the pan looks like this:

New Glasses

I got new glasses this week-after about 7 years! And do you know what I like about these glasses? I think they make me look smarter. And sometimes I want to look smarter. Because I am smart. And I used to be really smart. It was my thing, my identity. But as I wheel four messy kids around the commissary I don't think I'm quite the picture of a National Merit Scholar anymore. That's just fine with me most of the time. But every once in a while, I just want people to know. And that's when you'll see me in my new glasses.

PSS. I'm going out on a limb writing about how smart I am in a post which undoubtedly includes plenty of grammtical errors. Don't judge me. I also birthed 4 kids in less than 6 years.

Toofs . . . and some good music

Sam lost his first tooth tonight. And probably lost trust in his dad--for little while, anyway. This baby HAD to come out; the permanent one was almost all the way in behind it. So while "just looking" Jess grabbed and yanked and --after everyone had icecream-- we are doing fine.

In other news, the kids found this cd yesterday. It's just a generic blank cd--must be a copy from someone. We LOVE it and have been dancing to it all day. But I can't figure out what the album is or where it came from. So, if anyone recognizes this playlist (I suspect it's from Melissa) stand up and take a bow!

Food. Lots of talk about food.

So, in order to get back into blogging, and after reading Suzanne's yummy story about beets, today I'm going to talk about food. One of my themes lately has been "real food." I have been trying my hardest to stay away from prepackaged, convenient items with long lists of ingredients. I'll tell you it's all about my kids' health. But if you know me, you probably know I am also a bit of a control freak. I LOVE the idea of being able to control exactly what goes in my menu. As I mentioned before, I have given up this in favor of some cream and splenda. But I haven't mentioned that I have almost completely given up this. I know. Wow.

While not too picky about organic verses non-organic food (except for those pesky hormones in some dairy and poultry) my main goal for produce is to buy as local and seasonally as I can find. Now, I don't know that we can give up bananas. But I can hold off for a while on tomatoes--you can't tell me that a tomato in January tastes real. One place I am going for real food is a local organic farm. I got my first box of fruits and vegetables Friday and ooooh it was exciting!!! The children ate every carrot straight from the box before supper. I just have to figure out some good recipes for Kale and Swiss Chard, good winter greens.

Tonight I had my sweet friend and her children over for dinner. (side note: Her name is Sarah. Her husband is Jesse. They are in the army and live in our town. They have a daughter in preschool at Ella's school and a younger one named Adeline. Crazy, huh! We have a the same taste in fabrics and have jumped into sewing, cloth diapering and better eating together. What a blessing!) Anyway, today at the commissary I tried not to buy anything that i could make at home. That included flavored rice packets, soups, yogurt, refried beans, even cereal. And you know what? It paid off! I was happy with my grocery bill and really enjoyed my time cooking at home. I'm thankful that my job as a stay at home mom allows me the time and flexibility I need to fix these menus. I know it's not for everybody. But I'm a big fan of "Do what you can, and don't worry about the rest." And I'm also a big fan of "If I don't want to cook supper and I want Jess to take us out I just say 'We can have salad or eggs tonight.'"

Wanna know what was on the menu tonight?
Chicken and bean tacos--I roasted a chicken yesterday, and mixed half of the meat with some spices. The rest of the chicken will be good for the next few lunches.

The bean recipe was from here. The rice, I adapted from this yummy post from Pioneer Woman (soon I'm going to make the whole Mexican lasagna described--it looks soooo yummy). The kids didn't like it--i think it looked too tomato-y. But I loved it. Add some lettuce, salsa, cheese, and, oh yes! My favorite part! I strained some homemade yogurt in a coffee filter and had some delicious "sour cream"! (I really would have bought sour cream, but I just forgot it--I'm not that picky)

Wait. That wasn't my favorite part. This was my favorite part. But I can't take credit. Sarah brought this (she found the recipe here). And do you know what she did? She brought the cake early and left me alone with it while she ran errands. What was she thinking?!

I promise I just took the wrapping off so I could get a better picture. But it smelled soooo good. So I just had to have a tiny taste.

Stay tuned--hopefully tomorrow I'll post Menu Planning M-Thursdays. Although I might forget, as my mind will be excitedly thinking about the return of the worst show ever (reverse psychology-works every time.) In the meantime, I'd love to hear about what you're cooking!

Christmas gifts


I have racked up on Christmas gifts this year already, and it's only December 14th! They're not the pretty packages tied with bows you might have in mind, but they are the unexpected blessings of the season. Beginning with last week. A friend and wonderful photographer met us at Forsyth Park for a "mini-session"--30 quick minutes to get the perfect holiday picture. I was doubtful that our day would go well--30 minutes for 4 kids? But Laura is so good with the kids and full of ideas. Her best shots are interactive action shots so we just played with the kids while she snapped over 100 photos. And they are TERRIFIC! We will cherish them for years as they show how fun it is to have 4 little ones running around. I'll let you see them to, but promise to be surprised when your Christmas card arrives.

After our morning in the park, Jess took all four kids home and put them down for a nap. Did you hear that? He took all four kids home and put them down for a nap! That gave me a couple of free hours downtown to window shop and browse. I resisted the urge to get in my car and "get some things done." I ate lunch at a bakery I had been wanting to try for a while. I got coffee at Starbucks, and I visited all of the boutiques and stores on Broughton Street. It was the complete opposite of trying to go to the mall with four hungry, tired kids, and it was refreshing.

Today was our church's annual Lessons and Carols. It's a very traditional, very beautiful Christmas service and Sam and Ella Rose both sang in the choir. They were as sweet as you can imagine in their little angel robes. We love our church and it was such a blessing to watch our children participate. I made sure they knew what a wonderful gift they gave Jess and me with their songs tonight.

Right before the big kids were off to sing! Ella's feeling better now. Could it be the promise of a special kid's buffet after the program with all the candy and cookies she could eat?

Last minute gift idea. . .

I am still reeling from the poor decision I made this afternoon: take the 4 kids to the mall after school to run a few errands. Why are so many people shopping at 2pm on a Wednesday?!? So, in case you're like me and have vowed not to hit the mall again til January, I have a great idea for you. I couldn't post this earlier because I didn't want my family to see their gifts, but we delivered them at Thanksgiving.

Aren't these ornaments amazing and adorable?! I met Anne Luckey at the Coastal Kids Market--our tables were next to eachother and her mother was Adeline's happy babysitter. She does these custom ornaments from an emailed picture and ships them in a box ready to go under the tree (or on it!). These are of my nephew Liam, my brother and sister-in-law on their wedding day, my family on the day Jess came home from Iraq, and my parents and crew. She's taking orders til December 12 so go check her out!

And are you wondering why I don't also suggest a little something from Ella Bella Baby? It's because I am C.L.O.S.E.D. Ahhhh. Done. That is, until January. Here is a picture of the orders I sent out today, in production, and then ready to ship:

Indulgence

I couldn't resist. It just looked so good on the shelf, and boy, oh boy it was not a disappointment.



Since I have been more intentional about reading labels and feeding my family fewer processed foods I have also tried not to indulge in flavored coffee creamers which begin with "water, sugar, palm oil, corn syrup" and end with a list of unpronounceable ingredients. This has been a tough one because it's in the genes. When the Publix grocer sees my mom walk in, he lists off the new creamer flavors because he knows she'll take one of each. I've been using milk and a little splenda (OK, I know splenda's made in a factory too, but I'm taking baby steps here) but I just had to try this one. Vanilla Spiced Rum. And it is sooooooooo good.


Maybe I'll try to stop the diet soda habit instead. Except Diet Dr. Pepper was on sale today for $1.75/12 and I bought four.

Menu Plan Mondays *revised

First an update on last weeks menu: The goat cheese stuffed chicken meal--mixed reviews. I loved it. I thought it was delicious and simple. The kids didn't like it at all, and Jess said he didn't think it had enough flavor, but i think I'm right :-) I mean, my kids didn't even want the cheese grits that night--who doesn't want cheese grits?!? The Fiesta Chowder is always good, as well as the chimichangas, but my kids were just picky this week. Cheese tortellini in broth and calzones were gobbled up--should have made more. We didn't have the black bean soup or the pork this week so they'll carry over:

Tuesday: No cooking! We're going to visit Jess's brother and family who are visiting Amelia Island.

Wednesday: Pork au Poivre, roasted potatoes, creamed spinach, applesauce

Thursday: Jess is at Ft. Bragg, we'll eat frozen pizza

Friday: Chili Corn stack ups (another favorite of Emily's and I have chili in the freezer)

Saturday: Chicken fettuccine Alfredo with broccoli and bread

Sunday: Black bean soup, bread, salad

Monday: Chili Dogs, veggies, chips and dip

Tuesday: I think it will be this because I have the ingredients--it's from my catering friend Tricia so it's gotta be good:

Mu Shu-Style Fajitas:

1 T. butter
2 eggs beaten
3 cloves minced garlic
1 lb boneless pork-cut in thin strips
2 cups shredded cabbage
1 c sliced mushrooms
1 8 oz.can bamboo shoots- if desired
6 green onions chopped
1 t. lemon juice
tortillas warmed

In skillet melt butter and scramble eggs with garlic, salt, and pepper. Remove and set aside. Saute carrots in oil –set aside.
If you want to add any other vegetables( ie; zucchini, yellow squash etc) do so now then remove and set aside. Brown meat in oil. Add seasoning of choice (fajita seasoning or just salt and pepper). Add ½ cup water and bring to boil. Reduce heat and add eggs, carrots and remaining ingredients except tortillas. Cook 2-3 minutes. Warm tortillas. Put meat and veg. mix in tortillas with plum sauce if desired and roll up like a burrito.

Salad and fruit are usually our sides.

Plum Sauce:
In saucepan combine ½ c grape or plum jelly, ¼ cup sliced green onions, and 1 T cornstarch. Add 2 T dry sherry or ( I use dry white wine if I don’t have sherry),2 T soy sauce and 1 T vinegar. Cook until bubbly then stir and cook 1-2 min longer.


Might be a little too exotic for my crew, but it sounds good, and we need to break away from the Tex/Mex - Italian rotation.

I did it!

I MADE YOGURT. Really. I made it. Real. Live. Yogurt. This is so cool.


We love yogurt. I use coupons and buy up what I can, or I buy the bigger tubs of plain and we sweeten it with splenda and Grandma's jam. But we still run through it fast around here. I have been wanting to learn to make it for while, and then I found this on one of my new favorite blogs, a crockpot blog.

I followed her directions almost exactly so I won't repeat them here--you can check her blog out if you want to try this. For my starter, I accidentally got vanilla yogurt instead of plain, and was worried it would mess up, but it didn't. The only tricky thing was finding organic, NOT ULTRA PASTEURIZED milk. It's ok to have pasteurized, but not ultra, and the organics at a few grocery stores are ultra. Our health food store has 2 brands that were not ultra pasteurized. I picked


The crockpot lady said to start with whole milk, so we did. Later we might try lower fat milk with added powdered milk or gelatin to help it thicken. I even thought we could try goats milk so Adeline could have a taste! Can you tell I'm a bit excited?

Here is our finished 1/2 gallon of yummy healthy yogurt.



On the left, next to the milk, you'll see I'm draining the whey from one batch, to thicken it like a Greek yogurt. I'm using a coffee filter. I've read whey is excellent to use in baked goods but I'll have to research it a little more.

Here is our favorite yogurt tester. She wanted to eat it all even before I sweetened hers with a little splenda.

I would HIGHLY recommend this easy crockpot recipe. And let me know if you try it!

Menu Plan Mondays

I usually do my coupon clipping and plan my weekly menus on Mondays (commissary's closed) and shop on Tuesdays. Why not blog it? AND ask, no beg and plead you bloggers to show me yours. Emily did it for a while (no pressure, em, still fighting the femcha) but wouldn't it be SO FUN and EASY if we were able to plan a week of menus, and then get 4 or 5 weeks in return? I did this once with girls here in Savannah on paper and I ended up with some family favorites. So. . . I'll get the ball rolling.

Tuesday: Chicken Breasts stuffed with Garlic and Herbed Goat Cheese, Cheese Grits, Broccoli, sliced apples

Wednesday: Use slow cooker black beans for Black Bean Chimichangas, save the rest for Saturday (from Emily's menu Mondays!), corn

Thursday: Southern Living's Fiesta Chowder, bread sticks, use leftover toppings from wed.

Friday: Pork au Poivre, roasted potatoes, creamed spinach, applesauce

Saturday: Black bean soup, french bread, veggies and sour cream dip

Sunday: cheese tortellini in light broth with Parmesan crisps, Italian mixed salad

Monday: Calzones (sauce and dough already in the freezer)

Also baking: Apple Buttermilk Muffins and Banana Bread

Oh, and tonight, since Jess has a deacon's meeting, we are having Honey infused oat cereal in a light milk bath.

Favorite Things Friday

We arrived home on Monday night, but it has taken me four days to recover from our 2 day journey. Adeline DOES NOT like the car now. She probably screamed 3 of the 6 hours from Illinois to Nashville, and 5 of the 8 to Savannah. She's fine when we take her out of the seat. Hope this turns around--we have 2 more long trips coming up. . .

On to happier things! A few of my favorite things, at least my favorite things that are available for purchase! Sometimes I find something that I just want to tell others about, so here are some of my recent discoveries:


1. Baby Legs: I can quite easily justify spending 10-12 dollars on these cute one-size-fits-all leg warmers because they can be used for years and years. SO MANY cute designs. And now they're available at Target! But my favorite place to get them is #3.

2. These two Susan Hunt books have been great in our family worship time. The stories make the Bible Verses and Catechism questions really applicable. I was sold after two nights reading the ABC bible verses. The first verse we learned was "A soft answer turns away wrath." Well, that has become Ella Rose's theme. The second was "Blessed are the peacemakers." Perfect for Sam, the one who likes to push Ella's buttons. The Big Questions book is good if you want to catechize.


3. http://www.mom4life.com/ I love the products, love the free shipping, and love the mission.

4. Shade Clothing: True story: I went into Victoria Secret one day this summer and told the saleslady that I had a very low cut dress I wanted to wear to my brother's wedding and I needed a camisole to go under it. She looked at me and, in all seriousness she said, "Hmmm. How about just a really pretty bra?" My jaw dropped and I decided it was stupid of me to try to find a modest solution in a store I won't let me six year old walk in. My friend Marlo suggested I try the Mormons. She was right!!! I might not agree with Joseph Smith's theology, but his folks know how to make some cute modest clothes. I bought two camisoles from shadeclothing.com and I LOVE them. They are high at the top and long at the bottom and fit perfectly.

5. Slings: I don't have a favorite brand, but I like the ease of a plain old fitted sling. I found a sling absolutely essential in getting 4 kids in and out of church while Jess was gone. I think I became known as the girl with the sling. I got one at mom4life and another on etsy, which brings me to favorite thing number 5.

Like handmade, original stuff? Like ebay for crafters and no auctions. Or an online craft show. But you won't find a lot of hokey stuff here. Etsy is full of modern amazing goodies, mostly made at home by regular people like us! I feel SO MUCH BETTER spending my money on something handmade than on mass produced items in the store. I LOVE it!

Yum Yum!

Ooooh, the food in Nashville is good. At home and when we go out!

Last night Jess and I went out to eat with sister Rachel and Dave. Because I fed Addie and put her to sleep before we left, this was the first time since she was born that I wasn't restricted to a 3-4 hour outing (yep, still won't take a bottle--she's 6 months, should i give up?) We went to Wildwood Oak Fired Kitchen on Hwy 100, kind of a neighborhood place. It was the kind of restaurant I love, where the chef has lots of seasonal specials and just reading the menu is a treat in itself. With the four of us ordering, we tried the Duck Crepe appetizer, the Salmon, Lamb, Duck, and Beef, an a Apple Crisp, a Chocolate cake, and a Passion Fruit Creme Brule. I don't think any of us were disappointed with any of it. Our waitress was friendly and helpful and the atmosphere was laid back but still nice enough for me to feel like this was a special occasion. If you're in Nashville, I'd recommend it!

Then, this morning, my mom decided to try a Paula Deen recipe (so you know it's going to be delicious and horrible for you!) Canned biscuit doughnuts. MMMMMMmmmmmm! We made some dipped in chocolate, and others sprinkled with powdered sugar. We all agreed, the powdered sugar ones were by far the favorite--they tasted just like beignets. I think I'll have to make those again. So if you're in Nashville, I'd recommend stopping by my parents for some tasty breakfast.

Celebrating at school

I'm still waiting for talented photographers to upload some pictures of our weekend, but in the meantime, I'll give you a little taste:

Wednesday (a week ago) we celebrated both big kids' birthday's at school. One thing about being crafty--you think you can, and should, do it all. Well, I am NOT a cake decorator and I should have gone to the Cake Lady or Two Smart Cookies, or even Tricia Barrett for my kids' cupcakes. I know you're going to say they're cute, but they were a pain in the neck.
Sam chose monsters, Ella did too. But after the first set of monsters, I convinced her to do flowers.

When Sam gets home, I ask lots of questions about school and can usually get a pretty good summary about what he did that day. When Ella gets home, she spills every detail of every person in her class. What they were wearing.. . who got out of their seat. .. who brought which stuffed animal. . . It's fun to see the differences. Sam can't remember the names of his classmates, Ella Rose knows their names and what they brought for snack.

This one's for Grandma







Tonight I made dinner (for the first time in ages but that's beside the point). Honey Mustard oven-fried chicken breasts with corn and spinach from Grandpa and Grandma's garden. All of the kids ate it up, but Si--he loves spinach. Here is a picture of him on his 3rd (or maybe 4th) helping. I actually had to remove the bowl of spinach from the table and hide it to get him to try the chicken. He came close to throwing a tantrum over when i took it away.




Although I'm fond of green leafy vegetables, I was honestly just trying to get through dinner to get to dessert. At about 5:15 my cookbook magically opened on "White and Dark Chocolate Pies" and I had to have them. I made our own version lickity split--and almost sugar-free. Here's what i did: Crumbled some vanilla wafers in the bottom of individual ramikins. In a mixer, combine 4 oz softened low fat cream cheese and a couple tablespoons of splenda. Spread over cookie "crust". Top with prepared chocolate pudding (we used instant sugar-free). Top that with a squirt of whipped topping. Top THAT with some chocolate shavings to be fancy. Make a big deal about it being a surprise and the kids will LOVE it! Here they are closing their eyes and waiting for dessert:

Everything I needed to know about Raising a Child I learned from my Dog Trainer. . .


We finally picked up Amos from his obedience training today (in case you're just joining us, Amos is our DOG-- although I really really wish I could take some kids there too!) The summer heat, afternoon storms, Amos's fat belly, and his dominant personality turned his 4 week course into 8, but we LOVE the dedication of Curtis at Salt Creek Kennels and are eager to see all Amos has learned.

As we packed him up in the car, I felt just like I did the day we took Sam home from the hospital. Basically, "Gosh, I hope I don't mess this up!" And then I thought how similar Curtis's training tips were to all my child training tips! "From the minute he comes home, he'll be trying to be the boss." Hmmm. "You have to expect complete obedience, not half-hearted or partial obedience." Uh huh. "Never give a command if you do not intend or are not able to offer correction if they fail." Ok, consisitency. And how about the one I read just last night in my book about parenting the heart of your child. "When he fails to obey, discipline him, and then make him go back and do it the right way." Ok, it stops there. I don't have to dig into Amos' heart and motives. I guess I can't answer that mighty question in childrearing "How will this affect his soul?" But I still might ask him the question "Amos, was eating Sam's shoe rude or kind? Because love is not rude."

Anyway, so far tonight he's been wonderful. We're keeping his environment extremely controlled though for now. So, I'll keep you posted on how well he (and I) do, starting with tomorrow as Addie wakes hungry, Ella wakes cranky, Si is screaming "breakfast, breakfast!" and Amos needs a walk.

And another subject: I let the kids stay up to watch the Olympic opening ceremony. They thought it was amazing from 8pm til 9:02. By 9:03 all three were zonked out on the couch. That was the easiest bedtime we've had in a while!

Trying new things

Just thought I'd share an update on the cloth diapers. I really do like them. I've dealt with a few "dirty" ones and it wasn't too bad. Adeline wears them all the time, and Si, just when I'm pretty sure he's done all his business. I wash them every 2 days. Today I noticed they stunk, so I washed them again and rinsed and rinsed and now they smell fresh.

Although Adeline's booty is pretty big in these, I love the one-size diapers cause the littles can share them. Snaps in the front change the size.

and now, a new favorite snack. Ok, maybe not favorite. But Sam and I are lovin edamame! Ella will eat some, and Si really hates it. Sam's always been the one eager to try new foods. This is one you should try. We just bought it in the freezer section, followed the directions to cook it in the microwave, salted it, and they are ready to pop and eat (you don't eat the husk). We keep them in the fridge and pull them out for a healthy snack. Or we run to sonic for a cherry limeade cream slush.
